In Sri Lanka, Fenugreek Seeds are the "secret ingredient" in Kiri Hodi, a mild coconut milk gravy that is a breakfast staple.
Ingredients:
1 cup Coconut Milk (thick)
1/2 small Onion, sliced
2 Green Chilies, split
1/2 tsp Turmeric Powder
1 tsp Fenugreek Seeds (Trigonella Foenum-Graecum)
1 sprig of Fresh Curry Leaves
A small piece of Cinnamon stick
Salt to taste
1 tsp Lime juice
Instructions:
Combine: In a medium saucepan, combine the sliced onions, green chilies, turmeric, curry leaves, cinnamon, and the Fenugreek Seeds.
Simmer: Add 1/2 cup of water and bring to a boil. Let the mixture simmer until the onions are soft and the Fenugreek Seeds have released their nutty aroma.
Thicken: Lower the heat and stir in the thick coconut milk. Stir constantly to prevent the milk from curdling.
Finish: Once the gravy is heated through (do not let it boil vigorously), remove from the heat.
