Authentic Sri Lankan Recipe: Creamy Fenugreek White Curry (Kiri Hodi)

In Sri Lanka, Fenugreek Seeds are the "secret ingredient" in Kiri Hodi, a mild coconut milk gravy that is a breakfast staple.

Ingredients:

  • 1 cup Coconut Milk (thick)

  • 1/2 small Onion, sliced

  • 2 Green Chilies, split

  • 1/2 tsp Turmeric Powder

  • 1 tsp Fenugreek Seeds (Trigonella Foenum-Graecum)

  • 1 sprig of Fresh Curry Leaves

  • A small piece of Cinnamon stick

  • Salt to taste

  • 1 tsp Lime juice

Instructions:

  1. Combine: In a medium saucepan, combine the sliced onions, green chilies, turmeric, curry leaves, cinnamon, and the Fenugreek Seeds.

  2. Simmer: Add 1/2 cup of water and bring to a boil. Let the mixture simmer until the onions are soft and the Fenugreek Seeds have released their nutty aroma.

  3. Thicken: Lower the heat and stir in the thick coconut milk. Stir constantly to prevent the milk from curdling.

  4. Finish: Once the gravy is heated through (do not let it boil vigorously), remove from the heat.

  5. Balance: Stir in the salt and lime juice. The Fenugreek provides a unique, slightly bitter contrast to the creamy coconut, making it the perfect accompaniment to string hoppers or bread.
